Ingredients
- 12 lg. shrimp (10-15 count), peeled, deveined, tails removed
- 1 Tbsp. extra virgin olive oil
- 1/4 c. Ott's Famous "The Red" Dressing - divided
- 1 sm. red tomato, peeled, seeded and diced into 1/4-in. chunks
- 1/2 sm. red onion, diced into 1/4-in. pieces
- 1/2 Tbsp. jalapenos
- 2 cloves garlic, minced
- 1 Tbsp. cilantro, finely chopped
- 2 Tbsp. fresh lime juice
- Salt to taste
Nachos:
- 2-3 dozen tortilla chips
- 1 c. cooked black beans, pureed to a paste
- 1 c. shredded jalapeno-jack cheese
- 1/2 c. sour cream
Preparation
Preheat grill. Brush the shrimp using 1 tablespoon of the olive oil, then brush with Ott's Famous "The Red" Dressing. Season shrimp with salt. Place shrimp on grill over medium heat and cook for about 5 minutes, turning each shrimp after 2 minutes. Remove shrimp from grill and cool, then dice. Combine with remaining ingredients. Preheat oven to 375°F. Spread tortilla chips with black bean paste and place on sheet pan. Sprinkle with jalapeno-jack cheese. Place nachos in oven and bake for 4-5 minutes or until cheese has melted. Remove and place nachos on serving platter. Spoon a small portion of Ott's Famous "The Red" Dressing on top of each Black Bean Nacho and serve with sour cream.
